We're having a lazy Sunday and enjoying our version of soft hash browns, crispy veggie bacon, and over-easy eggs.

Ingredients

Serves 1 person, but you are welcome to make more of course.

Hash Browns

  • 1 russet potato (other potatoes can work also)
  • 1 tablespoon vegetable oil
  • 1 pinch of sea salt
  • 1 pinch of pepper

Eggs

  • 1 egg
  • 1 pinch of sea salt
  • 1 pinch of pepper
  • 1 tablespoon vegetable oil

King Oyster Mushroom Bacon

  • 1 king oyster mushroom
  • 1 pinch of sea salt
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • 1 teaspoon paprika

Directions

Hash Browns

  1. Wash potato.
  2. Shred potato with a mandolin slicer (you can probably find something cheaper at your local restaurant supply store).
  3. Coat pan with oil on medium heat and sprinkle a pinch of salt.
  4. After oil is sizzling, scoop 1/2 cup of potato shreds onto pan.
  5. Cook on one side until golden brown, then flip.

King Oyster Mushroom Bacon

  1. Slice mushroom vertically.
  2. In a bowl place mushroom and season with sesame oil, olive oil, salt, paprika.
  3. Coat pan with canola oil on medium heat and place mushrooms flat.
  4. When mushroom starts to brown, flip onto other side.

Egg

  1. Coat pan with oil and sprinkle salt on medium heat.
  2. Crack egg, sprinkle pepper and wait until egg white is crispy on bottom.
  3. Carefully flip the egg to slightly cook other side until crispy.
  4. Sprinkle chopped green onions. (optional)
