Potato Soup

Ingredients

  • 4 potatoes
  • 8 shiitake mushrooms
  • 2 cloves of garlic
  • 1/4 cup goji berries
  • 8 cups of water
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/2 tablespoon soy sauce
  • splash rice wine (optional)
  • 2 teaspoon mushroom seasoning
  • 1/2 teaspoon sugar
  • pepper 
  • 1 bunch melientha suavis or can use tyme 

Directions

  1. Peel potatoes and shred with grater.
  2. Slice shiitake mushrooms.
  3. Mince garlic.
  4. Place goji berries in a strainer, rinse, and set aside.
  5. Boil water in a medium size pot.
  6. In a separate pan, pour oil.
  7. Sautéed garlic and pour soy sauce.
  8. Add mushrooms.
  9. Add a splash of rice wine (optional).
  10. Add a splash of rice wine.
  11. Pour sautéed mushrooms into the boiling water.
  12. Place some water into the sauté pan to give the water flavor and add back to soup.
  13. Add goji berries and simmer.
  14. Add shredded potatoes and once it starts to boil lower hear.
  15. Add mushroom seasoning and sugar and mix.
  16. Add a handful of melientha suavis or thyme.
